Ground turkey is a great alternative to ground beef and is suitable to exchange for beef in most recipes. I have found, however, it usually requires more spice than ground beef. This recipe for Turkey Chili can easily be converted to a vegetarian dish by simply omitting the turkey. Serve up with some warm biscuits or buns and you have a very hearty, healthy meal.

Ingredients:
1 ½ lb
ground turkey
1
tablespoon olive oil
1 cup red
bell pepper, chopped
1 onion,
chopped
3 cloves
minced garlic
1
teaspoon cumin
1
teaspoon cocoa powder (unsweeted)
1
tablespoon chili powder
½
teaspoon paprika
1
teaspoon oregano
½
teaspoon cayenne pepper
½
teaspoon red pepper flakes
½
teaspoon salt
½
teaspoon ground black pepper
1
teaspoon Worchestershire sauce
1 28
ounce can crushed tomatoes (NOT drained)
1 can
kidney beans, drained and rinsed
1 can
pinto beans, drained and rinsed
1 can
black beans, drained and rinsed
1 cup
frozen corn

Directions:
• In
large fry pan heat oil, add turkey, salt/pepper and cook until browned.
• Add red
pepper, onions and garlic, cook until tender.
• stir in
tomatoes, beans. corn and spices.
• Heat to broil, then reduce to low and simmer
for about 30 minutes. If chili is too thick add some tomato juice or vegetable
broth.
